Side dishes that are easy AND delicious are hard to come by. I also really love things that look so gourmet but were actually a 5-10 min prep. Simple and flavorful! ~ Place flank steak in a large ziplock bag and poor marinade over. tightly seal ziplock and let marinate in fridge over night... flipping bag from one side to another every once in a while (don't wake up in the middle of the night to do this, that would just be crazy). Feel free to marinate for less time if needed, a few hours is good. </div>

~ Heat a large skillet on high and add 2 tsp of olive oil. Remove steak from bag and place directly in skillet. Sear for 2 min on each side.</div>

~ Place seared steak on a baking sheet and put into heated oven for about 8 min (medium-rare). Feel free to cook longer or shorter for desired taste.</div>

This dish is the definition of EASY!! Remember I'm a mom NOT a chef and 90% of my recipes are going to be super fast and easy... I could make my own Salsa Verde but lets face it, I don't have the TIME. And when I don't have the time to make something from scratch, I try to find the CLEANEST ORGANIC version. The things I look at the most are gluten, sugar, corn, and any unnecessary ingredients (Yucky/toxic/crap/make you feel terrible/can't pronounce/give you a hangover... Shall I go on?!). Joe's Scramble is a dish from the famous Pikes place Market... while visiting Seattle (where I'm originally from) my mom and I walked down to Pikes Place for a great breakfast at Lowe's. She ordered her usual breakfast "Joe's Scramble" and I followed... AMAZING<span style="font-family: Georgia, "Times New Roman", serif;">!!</span> So of course because it was so delicious I had to re-create this dish to share with YOU<span style="font-family: Georgia, "Times New Roman", serif;">!!</span> Sometimes you fall in love with a restaurant dish and then try to re-make it at home, only to result in total failure.. but this was not the case. Joes scramble was super easy and turned out exactly like I hoped!!! <span style="font-family: inherit;">Perfect switch up for morning eggs</span><span style="font-family: Georgia, "Times New Roman", serif;">!!</span></div>

<strong><span style="color: #e06666;">Ingredients:</span></strong> <br />
9 eggs <br />
10-12oz sausage (a little spicy is good)<br />
1/2 cup mushrooms, chopped<br />
1 cup spinach<br />
3 green onions, chopped<br />
fresh parmesan cheese, shredded<br />

*For fluffier eggs, add 1/8 cup half & half (or milk) while whisking eggs<br />

~ In frying pan cook sausage over medium-high heat until done. Add mushrooms and cook another minute.<br />
~ whisk eggs together in small bowl and add to sausage mix. <br />
~ Cook until almost done, add spinach, cook until slightly wilted.<br />
~ Top with green onion, parmesan, and Serve.<br />

**Using uncooked beans - cook beans in 6 cups of water and throw in 1 clove of garlic. Bring to a boil and then simmer for 2 hours.</div>

~ In large soup pot, cook bacon on medium-low until crisp. then remove and set aside for later. (keep bacon grease in pot)</div>

~ Slice tomatoes in half along with half an onion and place in pot with meat for 3 or 4 minutes (want them to soak up some meat juices and soften a little). </div>

~ In a blender add 2 cloves garlic, 1/2 batch of cilantro, 1 tsp salt, 1/4 tsp pepper, and the tomatoes/onion from pot. Blend until completely liquefied. </div>

~ Add blended sauce to pot along with beef stock and the crisp bacon. Let simmer for 10 minutes.</div>

This is a layered cake so use 3 different mixing bowls for Streusel topping, cream cheese layer, and cake layer.<br />

<span style="color: #e06666;"><u>Streusel Topping: </u></span><br />
~ Mix 1 cup almond meal, 1 tsp cinnamon, 1/2 cup sweetener, pinch of salt, protein powder, and 5 TBS of butter (if you don't use protein powder then only use 4 TBS of butter). Mix to create a crumble. Use pastry blender, knife, or fork... whatever works for you. Don't worry if its not perfect, just crumble with hands over the top when needed.<br />
<br />
<span style="color: #e06666;"><u>Cream Cheese Layer:</u></span><br />
~ Mix cream cheese, 1 egg, lemon juice, and 1/4 cup sweetener.<br />
<br />
<span style="color: #e06666;"><u>Cake Layer:</u></span><br />
~ Mix 2 cups almond meal, baking powder, baking soda, 1/2 tsp cinnamon, 1/2 tsp salt, and 1/2 cup sweetener.<br />
~ Add sour cream, oil, vanilla extract, 2 eggs, and mix well<br />

~ Grease 9x9 baking dish and layer... cake mix first, then cream cheese, then sprinkle raspberries, and finish with streusel on top.<br />

4 lbs chuck roast<br />
1 (16oz) bag of baby carrots<br />
1 white onion, chopped<br />
1 celery stalk, chopped<br />
1 package dry onion soup mix (GF) <br />
1 cup water<br />
salt <br />

1 head cauliflower<br />
4 oz cream cheese<br />
1 frozen peas, thawed<br />
salt & pepper <br />

** I couldn't find a 4lb chuck roast so I bought 2 - 2lb<br />

Pot Roast<br />
~ Season meat on both sides with salt and pepper.<br />
~ Brown meat on both sides in a large skillet over high heat, about 3- 4 min per side.<br />
~ Place in slow cooker and add dry onion<br />
soup mix, water, carrots, celery, and onion<br />
~ Cook on low setting for 8-10 hours<br />
~ When finished add salt to taste <br />

Mock Potatoes:<br />
~ Steam cauliflower (slightly overcook)<br />
~ Place in mixing bowl and add cream cheese, mix until smooth (3-4 minutes). Add salt and pepper to taste<br />

~ While beef is heating, chop broccoli florets. Add broccoli to beef and cook thoroughly</div>

~ Poor egg mixture into skillet and heat 3-5 minutes until the bottom of frittata is set</div>

~ Place skillet in oven and cook for 10-15 minutes. turn heat up to broil for another 2-3 minutes until fritata puffs </div>
